Thanksgiving Recipe

This is one of my favorite times of the year. I am going to be preparing a turkey for Thanksgiving. You will find my recipes for the turkey, Southern Cornbread Dressing, and Pumpkin pie. Giblet gravy you can use your own recipe. Let me start with the turkey because there are several important steps to preparing your turkey.

I have a 15 lb. turkey; I will set it out in the refrigerator to thaw for 3 days. I will wash the turkey with some lemon water and take paper towels to pat it down to dry. Remove the inside and set it aside for giblet gravy. I salt and pepper the inside. I stuff my turkey with oranges, lemon, garlic, onion, rosemary, and apples. I let a couple of sticks of butter soften, add chopped rosemary and garlic at the neck of the turkey. I gently put butter underneath the skin to moisten and flavor the turkey. I repeat the same at the end of the turkey and tie the legs together with cooking thread.

Now you are ready to cook the turkey. I use a cooking bag; I place the turkey inside the bag and add oranges, lemon, apples and onion around the entire turkey. Cook 4-1/4 hrs. at 325. I take a meat thermometer and test to make sure it is done, and in the middle reaches 180 degrees.

                                         Southern Cornbread Dressing

2.- packages of Martha White Yellow cornbread mix, follow instructions on the packages.

1.- Medium onion chopped 2.- large cans condensed cream of ` chicken soup

4.- Stalks of celery finely chopped 3.- tablespoon of sage

2.- tablespoons of butter 2.- eggs

1.- liter of chicken broth I use 33% less sodium

Salt and Pepper. I add some dry whole wheat or Italian bread but don’t overdue.

Cook 1 hour and 45 minutes at 350 degrees

                                                 Pumpkin Pie Recipe

1.- cup Pumpkin I.- large can of Carnation Milk (14 0z)?

3.- cups of sugar 1.- can of water

  1. – cup of flour 1.- Tablespoon pumpkin pie spice

6.- eggs yolks (Large eggs) use eggs yolks only 1.- a cup of whole milk

This makes to 2 pies, cook at 325 for 55 minutes. I serve with Cool Whip are make your own Whip cream. You can buy already made pie shells at Your local grocery and save time. You can freeze one pie for later.
